My First Fondant Cake by Megan

Hi Vanessa,

I baked and decorated my first choc mud fondant cake and thought I'd share with you. I have really appreciated the time you spend sharing tips and pearls if wisdom with customers.

I bought the cake mix from you which was great! The mud cake mix required melted dark chocolate and I saw some great flavour variations on your website like cherry ripe, baileys, etc. but thought I'd just check what flavour chocolate I had in the pantry. I rummaged around lol and found a pack of Cadbury funsize Turkish Delights. I followed the recipe but used half the dark chocolate and replaced the other half with Turkish delights.

It turned out really well, giving the cake a very subtle, delicious rosewater flavour that didn't overpower the rich chocolate. It worked so well and after I baked it, I realised it would tie in with the vintage rose theme decorations. Our guests raved about how good the flavour and density of the mud cake was!

One thing I had trouble with though, was cooking time. It needed a lot longer than the instructions stated. I checked at 2 hours but still very runny in the middle. I'm wondering if that was because I tried to bake 2 cakes at the same time (it was a 2 tiered cake). Perhaps when I bake my next cake, I'll only put one in the oven at a time and see if that helps.

Anyway, decorating was the best part and it was stress-free because I made most of the decorations a couple of weeks earlier and stored them in a container. Your website has been really helpful, especially in regards to using your deep silicone moulds. Your tip to put them in the freezer for a few minutes worked a treat.

I YouTubed how to make fondant roses and how to lay fondant over a cake. These would be great tutorial topics to put on your website if you get the chance.

Anyhoo, I've attached a couple of photos of the cake I made. It was my first attempt for my daughter's first birthday. Although it's not perfect, I'm one proud mamma and I'm thankful for your lovely support, time and advice! Oh, and I also used your cute silicone butterfly moulds and antennas to add some pretty details to my white chocolate & raspberry friands.

Thanks again so much!

Megan.
